Individually vacuumpacked, along the membranes removed cow, heifer or young bull Rump. Extra fat is removed same as possible bloodspots and tendon. Inner surface there is a muscle which in finnish called as pätärelihas, this muscle is removed. Ph 6,0 or under. The weight limit is + 2,2 kg.
